Of all the fat and sassy’s, I think this is the fattest and sassiest of them all! Tony says he’s keeping it fat with lots of lees work, full malo and quality ripe fruit sourced mostly from the Bridge Pa Triangle region. The majority is fermented in a large oak cuve then a small portion goes into stainless steel for freshness, and the rest matures in oak barrels, of which 20% are new. Peaches rolled in butterscotch, cashew butter and brulee notes. The acidity is smartly balanced.
